Meet the Teacher

Oh Pyper. You are going to have so much fun in preschool! Can't wait to hear all about your preschool days! You have the sweetest teacher & you are so thrilled. You kept threatening me during "Meet the Teacher"..."I am not going to leave when it's time to go. I am just going to stay here, okay? Just come back later for me." I love your excitement! I may or may not be slightly looking forward to getting some much needed business done when you are at school. Just maybe.

Beehives: Welcome

When I was serving in Young Women, we wanted a fun way to welcome the girls turning 12 into our class. I created this "Welcome to our hive" sign that was printed at 11x14 and laminated. It traveled from house to house of all the new beehives coming in. We also cut out little squares of bees and taped them all over the front door and house of the girls. date night.

I  love me a good date night with this hunk. He is so fun to be around and always keeps me laughing. I can't be mad at him for more than five....'s just too hard. Well... more than an hour at least. Love that we make the most of our Tuesday nights. Love, love him.

 That's it. I officially can't stand it. You are starting preschool next week. This is such a bittersweet milestone of your life for me. While feeling the pressure from the others to enroll you, I am holding on with a tight grip. Yes, SEVERAL people have drove me up the wall-crazy about enrolling you in preschool for two years now... but, it just hasn't felt right. The time you and I have been able to share together bonding, these past few years while G went to school is irreplaceable. I realize others may seem to think that a bit of early preschool would have done you some good but I am convinced otherwise. You will always have time for school... but you will only be my little girl for a short time. The time we have shared together thus far is far more important than anything you could have learned in preschool. And boy, as your mom, I have never felt so right. I love you Poodle. You. Are. My. Girl. I am crazy about you. I love your laugh, the way your eyes twinkle and your sparkly smile widens, I love the high pitched giggle that fills the room. I love after a tickle war, just the sight of my fingers wiggling in the air sends you to explode with uncontrollable laughter once again. You are beautiful, inside and out. I love your deep thoughts, when you sit in silence and drink in our heart felt talks. Then, respond in such a way that brings tears to my eyes.  Never, ever change. This next year of your life will be great as well, so busy... learning and preparing. So much fun and oh, so exciting!
I will miss you so much during the day... our chats, crafts, naps, errands and laughs. (I promise "O" will miss you lots too...but relieved to be able to walk down the hall without getting attacked with your mothering). We love you Pyps!

He DID it!!

Strawberry Shortcakes

"Strawberries?! I LOVE strawberries!...Cupcakes?! Oh, I LOVE cupcakes!" -Paisley

If you are wondering. Yes, in fact, I did have the CUTEST helpers ever.

I couldn't cut these babies up fast enough. They were gobbled up before we could even add them to our creation. (If attempting this recipe, be sure to have extras on hand, in case you have hunger helpers too).

Strawberry Short-Cupcakes
It's all in the name...short...this is one quick recipe! A yummy after school treat on a hot afternoon!

  • 2 cups diced strawberries
  • 2 Tbsp. sugar
  • 1 box white cake mix
  • 2 eggs
  • 1 cup whipping cream
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
Add sugar to strawberries in a medium bowl. Stir and set aside. Mix together cake mix, eggs, whipping cream, vanilla, and salt.

Scoop 1-2 tablespoons batter into paper liners. Add 2 tablespoons strawberry mixture on top. Cover strawberries with more batter and fill 3/4 full. Save extra strawberries for garnish.

Bake at 350 degrees for 15-18 minutes or until cake springs back when lightly touched. Allow cake to cool slightly before serving with whipped cream and strawberries.

**This batter is thicker than your typical cupcake or cake batter.

Whipped Cream Frosting

  • 2 cups heavy whipping cream
  • 1/4-1/2 cup powdered sugar (depending on preference)
Pour cream into large mixing bowl and start mixing at low speed. Gradually increase speed until cream thickens and soft peaks form.

Turn off mixer and add sugar. Start slowly again, beat until stiff peaks form.

The stiffer the cream, the easier it is to frost the cupcakes. Keep refridgerated

**I put my frosting in a plastic bag and snipped a corner of the bag off, then frosted. Instead of using the rest of the strawberry mixture, I topped my cupcakes with strawberry halves, I thought it looked prettier.

bowling, schmowling.

I am the WORST bowler, ever...ever. True story. If you ever want to feel really good about your bowling skills, just invite me to play. Viola! You will feel like a pro. My kids beat me. Half way through the game my husband asked if I wanted the bumpers up. Hmmm. Maybe I should have. This was one of our family famous "Rainbow Rides" more on that later.

Bridal Brunch

Finally, after two crazy weeks of lots of work, I finally have something to post for it. It started with the invites.....

Couldn't have survived the shower without my mom & sister. Thanks again you two! (Mom not pictured...she was a working machine)

Thanks to a great friend for making all of the cinnamon rolls. They were delicious!! I wasn't the teensiest bit sad when there were left overs!

Crepe bar. Everything you could have dreamed to add to those delicious golden crepes. Yum!

I have to give a little shout out to my gate. Found it just in the nick of time & couldn't be more thrilled with the $ and color!

Not to mention the amazing breakfast casseroles made by the none other Gma and mom.Once again, they didn't disappoint.

Thanks to my sister-in-law for humoring me with my request for these specific muffins. They were the talk of the morning. As was the fabulous parfait. Good call Moll!

Found these brown paper bags last minute, ran them through my printer, added silverware & napkin. Bummed my wooden disposable silverware didn't get here in time. I guess that means I will just have to have another party... :)
